Recipe: Chicken Sausage Stir Fry

I’ve always struggled with lunch ideas. Breakfast is my favorite meal of the day and I enjoy trying new recipes for dinner, but when it comes to lunch, I’m often stumped. I want something delicious, easy, healthy, and that can easily be transported to my office. It also needs to reheat well and be something I can meal prep in advance. I have a solid rotation of recipes these days, but sometimes I need something new. 

That’s how my chicken sausage stir fry came about. 

I was mid-Whole30 and in dire need of something that wasn’t a salad for lunch. I spied compliant chicken sausages while meandering the aisles of Target and an idea started to take shape. I picked up some zucchini, a red bell pepper, a bag of matchstick carrots, and a couple bags of frozen riced cauliflower. 

The outcome – despite how poorly it photographs – was a delicious, healthy, protein-packed meal that ticks all the meal prep and transport to the office boxes.

Chicken Sausage Stir Fry

Ingredients:

  • Chicken Sausages (check ingredients for compliance if doing Whole30 – I like these)
  • 2 Zucchini 
  • 1 Red Bell Pepper 
  • Bag of Matchstick Carrots (use however much you want!) 

Directions:

  1. Cut sausages into coins and then add to a pan with a bit of EVOO over medium heat. Cook until browned. 
  2. While sausage browns, slice zucchini in half, then slice those halves into pieces.
  3. Dice red bell pepper. 
  4. Once the sausage is browned, remove from the pan to drain on a paper towel. 
  5. Add vegetables, including your preferred amount of carrots, to pan and saute to desired texture, stirring occasionally. Season with desired spices if you prefer. (I recommend keeping some “crunch” to the vegetables as they will cook more when reheated for lunches!)
  6. Once vegetables have reached the desired cook, add the sausage back in; Cook for another couple of minutes if desired and enjoy! 

I like to serve mine over cauliflower rice. I buy the frozen bags and let them steam in the microwave most of the time. It’s also great over rice or quinoa! Store in an airtight container in the fridge. I sometimes add a bit of coconut aminos over mine after heating up for lunch!
