Once upon a time, I wouldn’t touch a member of the squash family with a 10 foot fork. Now, it’s one of my favorite vegetables. Yellow squash sauteed with corn, zucchini breaded and deep fried… and my current favorite, zucchini pizza boats.
Zucchini pizza boats are the perfect summer dinner dish. They’re (relatively) healthy and super easy to make. Plus, you can use whatever ingredients you want. Your favorite pizza toppings are just as delicious in a hollowed out zucchini as they are atop high calorie pizza dough!
One of the greatest things about these – besides the taste – is that they’re low in carbs and also gluten free (depending on ingredients).

Zucchini Pizza Boats
Pre-heat oven to 375 degrees while you prep the dish.
Cut your zuccuini in half and hollow it out. I tend to toss the zucchini I carve out, but it wouldn’t be a bad idea to find an actual use for it. (And tell me what it is!)
Drizzle each half with a bit of olive oil.
Add Rotel. I like the cilantro and lime Rotel best. It’s a little extra spicy.
Add pepperoni. I think these would be really great with chicken too.
Top with your cheese of choice. I used a bit of mozzarella and a bit of sharp cheddar.
Put in the oven and bake until the tops start turning a bit brown.
